Recipe Reformulated to Create a Natural,
Clean Label Soup

Opportunity

A global manufacturer of ambient soups came to us with the goal of reformulating a product line using only ingredients consumers recognised and trusted. Creating a clean label soup required removing key flavourings while maintaining taste. Due to consumer demand for more whole food ingredients, the company was committed to using only natural taste solutions.


Approach

Kerry’s research and development team worked in partnership with the customer to tackle this clean label challenge. To replace the missing flavour elements, we turned to our TrueTaste savoury vegetable stock, which uses proprietary technology and gentle processes to capture the most flavoursome components of natural ingredients. This powder solution enhanced the overall eating experience with umami notes while bringing a delicious and balanced taste to the ambient soups. Because of the ingredients, it was given the label declaration of “vegetable stock”.

 


Impact

Our customer was able to reformulate two delicious ambient soups with a natural label declaration using only kitchen cupboard ingredients. This satisfied the consumer need for clean label, authentic taste using traditional cooking processes and the soup manufacturer’s need for product stability, functionality and taste and aroma impact.
